In order to produce a credible tournament, we must be sure to be well-educated about bacon itself. This can be an area where we share various Bits o'Bacon Research with which we can educate one another.

The top 10 Refrigerated Bacon Brands. Oscar Mayer and Hormel Black Label apparently lead the non-private label brands, followed by some brands I don't recognize. It's interesting to note that Hormel Black Label is considered a separate brand from Hormel, whereas Oscar Mayer is apparently a single, unified brand.

This is an excellent discussion of Bacon trends that may be referring to the findings in the above link. In addition to exploring the various new entries into the market, it quotes double-digit bacon growth, and also mentions some tasty-sounding potential contestants. I, for one, would love to try the referenced Jersey-raised Applegate Farms antibiotic-free, nitrite-free Sunday Bacon.

While searching for more info about Applegate Farms Bacon, I found this gem, apparently the result of an internal Bacon contest at lowcarbluxury.com. It seems to also reference Boar's Head bacon. It may give us some ideas of the criteria by which to judge the bacon.
